An important award, of course \u2014 but here at Poggio, we received it quietly, almost softly.<\/p>\n<p data-start=\"462\" data-end=\"566\">Because SAL8 was never created to win something.<br data-start=\"510\" data-end=\"513\" \/>It was created because it made sense for it to exist.<\/p>\n<h2 data-section-id=\"1kkks12\" data-start=\"573\" data-end=\"609\">Everything begins with what grows<\/h2>\n<p data-start=\"611\" data-end=\"685\">Before the bar, before the cocktails, before the ideas\u2026 there is the land.<\/p>\n<p data-start=\"687\" data-end=\"750\">SAL8 lives within Poggio ai Santi, and that changes everything.<\/p>\n<p data-start=\"752\" data-end=\"844\">Herbs are not ingredients: they are presences.<br data-start=\"798\" data-end=\"801\" \/>Aromas are not additions: they are seasons.<\/p>\n<p data-start=\"846\" data-end=\"991\">There are days when something disappears, simply because its time has passed. And others when something appears, without ever being truly sought.<\/p>\n<p data-start=\"993\" data-end=\"1071\">This is how each drink takes shape: not from a recipe, but from what is there.<\/p>\n<h2 data-section-id=\"w915yp\" data-start=\"1078\" data-end=\"1111\">A fragile (and honest) balance<\/h2>\n<p data-start=\"1113\" data-end=\"1145\">\u201cGreen\u201d is a word we hear often.<\/p>\n<p data-start=\"1147\" data-end=\"1187\">But here, it is not an aesthetic choice.<\/p>\n<p data-start=\"1189\" data-end=\"1240\">It is a limit.<br data-start=\"1203\" data-end=\"1206\" \/>And at the same time, a direction.<\/p>\n<p data-start=\"1242\" data-end=\"1418\">Working with what grows around us means accepting that not everything is always available. That not everything can be controlled. That each season brings its own possibilities.<\/p>\n<p data-start=\"1420\" data-end=\"1488\">And it is precisely within this limit that SAL8 finds its character.<\/p>\n<h2 data-section-id=\"r41p66\" data-start=\"1495\" data-end=\"1518\">The people behind it<\/h2>\n<p data-start=\"1520\" data-end=\"1573\">Behind all of this, there are hands, eyes, attention.<\/p>\n<p data-start=\"1575\" data-end=\"1835\"><span class=\"hover:entity-accent entity-underline inline cursor-pointer align-baseline\"><span class=\"whitespace-normal\">Marco Notari<\/span><\/span>, guiding the work behind the bar with precision and sensitivity.<br data-start=\"1677\" data-end=\"1680\" \/><span class=\"hover:entity-accent entity-underline inline cursor-pointer align-baseline\"><span class=\"whitespace-normal\">Andrea Palmieri<\/span><\/span>, welcoming and accompanying each experience.<br data-start=\"1762\" data-end=\"1765\" \/><span class=\"hover:entity-accent entity-underline inline cursor-pointer align-baseline\"><span class=\"whitespace-normal\">Rinaldo Cristoforo<\/span><\/span>, in dialogue with the kitchen.<\/p>\n<p data-start=\"1837\" data-end=\"1927\">And <span class=\"hover:entity-accent entity-underline inline cursor-pointer align-baseline\"><span class=\"whitespace-normal\">Giulio Neri<\/span><\/span>, holding everything together without forcing it.<\/p>\n<p data-start=\"1929\" data-end=\"1998\">This is not a team that imposes an idea.<br data-start=\"1969\" data-end=\"1972\" \/>It is a team that listens.<\/p>\n<h2 data-section-id=\"1o305q1\" data-start=\"2005\" data-end=\"2038\">A recognition that comes after<\/h2>\n<p data-start=\"2040\" data-end=\"2061\">The award came later.<\/p>\n<p data-start=\"2063\" data-end=\"2191\">After years of attempts, adjustments, good seasons and more difficult ones. After the kind of daily work that often goes unseen.<\/p>\n<p data-start=\"2193\" data-end=\"2232\">Perhaps this is why it feels different.<\/p>\n<p data-start=\"2234\" data-end=\"2345\">Not as a destination, but as a sign that the path \u2014 just as it is \u2014 can be understood from the outside as well.<\/p>\n<h2 data-section-id=\"ctjwhc\" data-start=\"2352\" data-end=\"2379\">And then it begins again<\/h2>\n<p data-start=\"2381\" data-end=\"2410\">SAL8 has just opened again for the 2026 season, returning to its natural rhythm.<\/p>\n<p data-start=\"2412\" data-end=\"2458\">And it will be, as always, slightly different.<\/p>\n<p data-start=\"2460\" data-end=\"2574\">Because nothing here is ever truly repeated.<br data-start=\"2504\" data-end=\"2507\" \/>Each year begins again from what grows, what changes, what remains.<\/p>\n<p data-start=\"2576\" data-end=\"2641\" data-is-last-node=\"\" data-is-only-node=\"\">And from that simple first gesture:<br data-start=\"2611\" data-end=\"2614\" \/>to look around, and notice.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>SAL8 When a bar grows from the land There are moments when we realise that some things are not built, but simply allowed to happen.
