At Poggio sustainability is not a label, but the way we live every day: growing without forcing, harvesting what the season offers, giving back to the earth more than we take.

The garden, the fields and the animals do not serve hospitality: they come before it. Everything begins with them.

Living agriculture

We farm organically, following natural rhythms and biodiversity. Wild herbs, heirloom vegetables, flowers and fruit coexist in a balance we do not want to control, but to protect.

No chemicals, no hurry: only healthy soil, patient hands and the time plants require. A ladybird among the leaves is worth more than any certificate.

What we harvest reaches the kitchen within a few hours, travelling a few metres: the shortest possible supply chain, the one between the garden and the table.

To protect, not to exploit

Sustainability, for us, is first of all about people and animals. We train the youngest, we choose inclusive work, and we do not optimise the season at the expense of those who work with us.

The donkeys, the goats and the estate animals are not decoration: they are part of an ecosystem that teaches us slowness and care.

Every gesture — from composting to water harvesting, from choosing local suppliers to reducing waste — comes from the same conviction: beauty only lasts if it is sustainable.
