It is not about complexity, but identity: every drink reflects the land it comes from, in a more unexpected and playful way. Behind the counter lies a daily craft of foraging, patient waiting and gestures repeated with the natural cycles.
Alongside the mixology, a list that draws on recipes over 150 years old — from pre-Prohibition America to tiki charm and a European bohemian soul — and a selection of local wines, together with the Estratti amari produced at Poggio ai Santi.
A method that, pursued with consistency, is today legible far beyond our territory. SAL8 won first place in the green category at the Bar Awards 2026.
The award, promoted by Bar Giornale, each year selects around 200 venues across Italy and celebrates the projects that structurally integrate agricultural practices, short supply chains and a conscious use of resources.
The agricultural bar has also entered the prestigious Top 500 Bars in the world, at number 438: a milestone for a place where the cocktails, quite literally, are born in the garden.
